Right before serving, don’t forget to add a dash of ground pepper and serve it with a side of pickled chile. Pan-fry to char the noodles before tossing again. Then, spread the noodles so they touch the bottom of the pan. Using a tong or chopsticks, toss the noodles so they are coated with sauce (I used a wok spatula). ![]() Now, when you add the noodles, try to spread them out a little before adding the sauce. To put this dish together, sauté the garlic until fragrant, then, add the veggies. I always have some seasoned pan-fried tofu ready for my stir-fries. In this noodle dish the wide rice noodles are stir fried initially, leading some people to refer to the dish as pad (fried) rad na but it should be noted that although the dish contains an element of stir frying it is more of a braised in gravy noodles style dish. You need fresh rice noodles for this dish to be authentic although dried noodles that are cooked will work if you can find good quality dried wide and flat rice noodles. Your Flat and wide rice noodles should look like this when finished.
